You’ve no doubt seen their magical libations on your Instagram feed: Since opening in 2019, the Welton Room has made a name for itself in Denver with its ethereal spirited concoctions that have more in common with modern art than they do with your standard happy hour beverage of choice. Late last year, the Welton Room opened a second location in the same building as its original cocktail lounge, and the new, larger space offers more seating and a full kitchen for a wow-worthy dining experience that’s on par with what made us obsessed with the Welton Room in the first place. 

Don’t worry; the magical elixirs are still being poured with smoke and flair at the original location, now called Monkey Bar at Welton Room. When you visit the new, expanded Welton Room, you’re in for a similarly enchanting experience.  Combining imaginatively crafted libations in a lush lounge ambiance, the restaurant serves modern American small plates with a global twist in an elegantly sensual atmosphere. It’s the perfect spot for an intimate night out or a fun gathering with friends. 

Getting There 

Located at 2590 Welton St., the Welton Room is conveniently located in the vibrant Five Points neighborhood of Denver. Make a transportation plan if you’re visiting on a busy Friday or Saturday night. There’s limited street parking, so take an Uber or Lyft and skip the hassle. 

No matter where you dine at Welton Room, it will be in high style.

The Vibe

This elevated perch gives you a front-row seat as the chefs create their delicious dishes.

The Menu 

Get ready for a culinary journey. Chefs Gregory Mak and Alex Grenier tantalize tastebuds with an unforgettable menu of ever-evolving small plates that combine modern American fare with global influences. I was surprised by how this team could infuse so many different cultures into a tiny plate. I highly suggest starting your dining experience with the hamachi Crudo. This small plate dish could be shared, but after the first bite, I couldn’t resist eating it myself—and the chef suggested eating it in one bite to truly experience the mixture of subtle Asian flavors, so I was totally justified. The charred octopus is another standout dish. The meaty tentacles are cooked in a sous vide water bath, then brushed with Calabrian butter and grilled to achieve the perfect char. The result is delectably tender and flavorful, and it’s served over a bed of grilled fennel and preserved lemon, then sprinkled with dehydrated black olives and locally sourced feta for an authentic taste of the Mediterranean. 

The Cocktails

I tried the Oaxaca Vibes—an exceptional mezcal and Aperol cocktail brought to life by igniting dried lemon and fresh rosemary, then extinguishing it in smoke. The flavorful mix of oak, citrus, and herbs is the perfect way to whet your palate for your culinary journey.

Or, if you’re in the mood to be entertained, sidle up to the bar and watch the talented mixologists put on some fiery, smokey shows. Sit back, relax, and order away. No matter what you choose, you’re in for a treat.
